The late Rytek Kutas, author of "Great Sausage Recipes and Meat Curing", had been a professional sausage maker for most of his life. During his long career he gathered and documented hundreds of delicious and regionally authentic recipes. These formulas are mixed by us, in-house, at our facility in Buffalo, NY; with very quick turn-around ensuring these recipes come to you as fresh as humanly possible!
