The Traditionalists only choice of casing. Nothing is quite like working with a natural casing, the techniques of flushing, careful yet efficient stuffing and linking are a task done with pride and patience; and always result in a superior product. Casings become a transparent sausage skin which hold everything in, develop attractive smoked colors and give the sausage that characteristic *snap* in every bite. Now the most popular sizes are available in a pretubed and preflushed product, an innovation that we are very proud to offer our customers: simply soak the casing with the plastic tubing and when you are ready to stuff, slip the entire casing on and pull the plastic out… simple and everyone agrees it saves time and plenty of energy. Along with the standard deli sized sausage diameters we also have small diameter sheep casings for making hotdogs or franks and a wide variety large diameter casings from Hog Middles and Beef Bung, to the distinct, naturally "U" shaped Beef Rounds.
