This wire press gives boneless ham a "grilled" or "scored" pattern on top and bottom of meat. 1 in. x 1 in. shelf openings allow for better smoke penetration, reducing processing time. Four high tension springs ensure ham stays firm and slices without breaking apart. Also great when making soppressa, peppered butts , pastrami, corned beef, turkey breast or proscuittini.
