already made twenty pounds of it with the High temp cheese and turned out good. First time I used the smoker to do it instead of oven. Need bigger smoker now. Thanks for the great products  Andy

Goose Summer Sausage October 31, 2015

Excellent product, easy to do. I used 4lbs Canada goose breast with 1lb fatty pork, mixed in some high temp cheddar in one, and pepper jack and fresh habanero from the garden in the other. I let mixture set overnight in fridge. Stuffed casings the next day and placed in oven on my lowest setting 170, for 14 hrs. Brought these to duck camp and they were a huge hit!!! Serve cold, sliced with crackers and Sam Adams Octoberfest, or your favorite beer. Will be doing a lot of goose summer sausage this season!! AWESOME!!!
