Mineral rich sea salts have been used in gourmets around the world for thousands of years. Sea salt is preferred by many people for use in foods because it does not go through the many steps of processing that table salt does. While it does not contain iodine, an important additive in today’s salts, it does have several important minerals that the iodized counterpart does not. Use it for a genuinely authentic, old world sauerkraut, the way our ancestors did!

I purchased this sea salt and when it arrived it said it contained magnesium carbonate but at some unknown percentage.  I was disappointed because the last 10lb bucket of sea salt I bought did not have this additive and this was not shown in the catalog.  It is also not shown on the website unless you blow up the picture of the label on the container.  While magnesium carbonate is not a bad additive, carbonate is a buffer and will buffer the effect of acid production (fermentation).  I was planning to use this for fermenting sausage (salami) where you want to control pH pretty carefully but since I don't know how much carbonate is in the salt, I won't use it.  It's probably fine for sauerkraut.

We have had great success using this sea salt in all our dried and fresh meat products. It's somewhat more in cost over purified salt but we feel that the product we get is worth the money.
