There are few foods that have their roots as deep in the history of human cuisine as sausages. One of the perennial favorites among sausage making recipes is the Bangers that Europeans have enjoyed for centuries. Even today, English, Irish and Scottish diners serve up hot, freshly made Bangers to hungry locals and tourists. To make your own big batch of this British staple, start with the following ingredients and sausage making supplies:

  • Meats - 1/2 pound lean ground pork, 1/2 pound lean ground veal and 6 oz. ground pork fat
  • Spices - 1 tsp salt; 1/4 each of black pepper, cayenne, fresh thyme, fresh marjoram; 1/8 tsp nutmeg, mace; 2 tsp fresh sage
  • Bread - 3 slices of crumbled white bread
  • 1 tsp, finely grated lemon zest
  • 1 large egg
  • Hog casings

Combine the bread crumbs with the meats and fat. Mix together all the spices, lemon zest and egg and knead these into the bread/meat mixture. Now you're ready to stuff your own homemade sausages for boiling or frying.
