Finding the right meat

One of our favorite recipes utilizes venison, and is the perfect use for all of that deer meat left in the deep freeze after hunting season. This enables you to make useful all of the parts of the deer not tender enough for steaks but still filled with that wonderfully unique venison flavor. Using one of our meat grinders, grind down the deer meat and mix evenly with ground chuck from your local grocer. The other ingredients include:

  • Mustard seed
  • Mustard powder

  • Quick-curing salt
  • Pork casings
