The name of this blend sort of defeats the purpose of a description. Its Hot and Sassy. What that really means is it gives the finished product a spicy, juicy, mouth-watering taste. Why it's sassy, no one really knows. Anyone that likes salami with a little extra umph will enjoy this one. Definitely worth giving it a try. No surprise this salami tastes great with hickory or alder smudge.
When smoking, use Insta Cure™ No. 1 and Soy Protein Concentrate, stuff into a beef middle or fibrous casing (Insta Cure™ No. 1, Soy Protein Concentrate and casings sold separately).
