A highly seasoned and spiced fresh sausage. Makes a distinctly reddish sausage, the mexican vareity of chorizo is made with fatty pork trimmings, makes a great breakfast sausage. Whether you prefer the smoked, dried (dry-cured), or fresh variety, this seasoning will help get you there.

Chorizo can be stuffed in a 32-35, 38-42mm hog or collagen casing (sold separately) depending on personal preference.
