A Summer Sausage seasoning of the cooked variety, while it will likely not last as long as a dry or semi-dry cured recipe, there is a large contingent of hunters that prefer a good cooked version. Works great as a beef/pork combo or venison/pork combo to prevent a dry consistency in the finished product. Great Blend.

When smoking, be sure to add Insta Cure™ No. 1 and stuff into whichever type of large diameter casing you prefer (Insta Cure™ No. 1, and casings sold separately).
