I used this mix with a 10 lb. pork shoulder I ground through 3/8" plate and stuffed into natural hog casings. Bottom line: Amazing, fresh flavor! The mix is just right and the spice doesn't overpower the meat - you get a nice balance of pork and seasoning that is mild and pleasing. I'm not a hugh polish sausage fan, but this produces a good blend of flavors and doesn't go overboard. Great braised in beer and pan fried. I'm anxious to try smoking my links next time and imagine that some mesquite or applewood would give it some "kick" and would compliment the pepper and marjoram.
