This stuff, also known as CKX is absolutely amazing. In addition to making awesome tasting sausage with as little as 3% fat, it can be used for making all sorts of dressing. Use it to make imitation mayonnaise, not so good on its own, but really good for making Russian dressing for your Ruben sandwich made with homemade pastrami, sauerkraut, Swiss cheese, and caraway rye. I will not give my personal recipes for such things, but the CKX is amazing stuff. Good luck finding recipes online that use it, but give it a try yourself. 1 tsp replaces 4 ounces of liquid fat, of course water must be added. You may not need a pound, but at least buy the 8 oz size, and play around a bit. When you use it for sausage it is necessary to add additional seasoning. Happy Sausage Making. = ChefCook93
